Let the students write a rough draft, and then check and make revisions by themselves.
Instruct the students to exchange and revise their writings in pairs.
Get the students to write their final copies.
Encourage some students of different levels to read their writings in class.

Show the students one possible version. Let them read and appreciate it.
Sample:

It was kind of you to remember my birthday. Thanks a lot for sending me a nice gift. The beautiful figurine is just perfect for my bookshelf.
To tell you the truth, I thought you have forgotten me since you married. Anyway the gift will always remind
