    Safety when cooking is paramount and all precautions must be taken. While most of us consider our practices safe, just how many of us follow the proper practices in the kitchen and on the deck Here are a few tips to keep you, your family, and your guests, safe when it comes to cooking. You don't want the Bacteria Boys or paramedics visiting!
    Safe Meat Temperatures Poultry Whole 170 Parts 170 Stuffed 170 Ground 170 Beef and Lamb Ground 160 Steak Rare Your choice Medium rare Medium Medium well Well done Pork Medium rare Medium Well done Ground 145 160 165ish 170 145 160 170 160 Good Practices 1 Wash hands regularly and after handling raw meats, poultry, going to the restroom, blowing/wiping nose, or handling garbage. 2 Always wash kitchen countertops, utensils, dishes, and cutting boards thoroughly with soap and hot water after contact with raw meat, poultry, fish, and other raw foods. 3 Use of separate cutting boards for raw and uncooked food is wise. Different colors can help 4 Use acrylic or Teflon cutting boards, rather than wooden ones where bacteria can hide in grooves 5 Thaw foods in the refrigerator, rather than on the counter top; or thaw in the microwave 6 Marinate foods in the refrigerator. Do not reuse marinade.
    Cooking Safety 1 Never place poultry above other items on the smoker or grill. The juices from the poultry can drip down onto your other foods and cause a potential health concern. 2 When opening foil packaging that has been in use inside of the cooker be cautious of steam burns and boiling liquids. 3 ALWAYS open the beer can PRIOR to placing into the cavity of the beercan chicken you are about to cook. Trust us, it can, and will, explode. 4 Use caution when using a grill, smoker, or other flame device on a wooden deck. If at all possible use a heat shield underneath.
    Smoker/Grill Safety Position your smoker/grill a minimum of three feet (one meter) away from other objects, including the house and any shrubs or bushes. Keep a fire extinguisher or hose handy just in case… Place your smoker/grill on a stable surface. A wobbly grill is a recipe for disaster and a serious hazard. Check for grease build-up and clean if necessary. Excessive grease can flare in unexpected places at unexpected times. Never leave young children or animals unattended in the vicinity of a hot smoker/grill... and don't let them play close by. Not to mention that dogs tend to eat what they want, when they want, including your Prime Rib Roast or Boston Butt! Always know where your fingers, hands, and arms are at all times.
